Currently we access PhpMyAdmin by simply putting /phpmyadmin after the domain
What is recommended so that normal users do not have access to PMA?
Change the PMA port and create a rule in iptabless so that only a few ips can access it?
I would like some recommendation!

Delete the /etc/apache2/conf/phpmyadmin.inc
And create a new template for the hostname with the content of the /etc/apache2/conf/phpmyadmin.inc
Then you also able to add login via http auth or .htaccess login

Could you guide me where I can change port 80 (default) to port 8081
Where this new port would be 8081 to access the PMA

I have no guide for you either, but you definitely do not want to be accessing phpMyAdmin without using HTTPS.
