Would anyone know a way to change the value of helo? I want it to have a specific domain name instead of what the actual server name.

The HELO header sent by your Exim outgoing mail server must contain the real name of the machine it runs on and must match the PTR record of your DNS, so that mail sent from your server is not considered fraudulent by most platforms. Changing it can get you into trouble.
