Can I edit the configuration of a specific domain (vHost conf) directly from the panel? I have only nginx+php-fpm installed.

Best way is to create a own template, check out the following directory: /usr/local/hestia/data/templates/web/nginx
You can copy the default template and adjust it to your needs, after all you can select that template in web domain.

Please navigate to /usr/local/hestia/data/templates/web/nginx/php-fpm
where you can find templates for nginx configuration. Use default.* files to make your specific template.
