I want to install opencart on my server. I see now that opencart latest version requires php 7.3 minimum. My question is which version of linux os comes with pho 7.3 as default?

Just select 7.3 as PHP Version
HestiaCp comes with all php versions starting with php5.6 till php7.4 (https://docs.hestiacp.com/release_notes.html#main-features) and you can select a different php version on each domain. There is also aOopencart quick install wizard
