Tell me please. How to install hestia without all apache addons and stuff? I have a server set up with the mysql I need and the rest. I want to put only the hestia panel itself

Not possible…
Hestia changes a lot of more files than only “HestiaCP” it self. As config needs to be done as well we can’t install only HestiaCP
Just dump your mysql, backup your website files and do a clean reinstall.
