You can choose letsencrypt certificate server side domain automatic checking checkbox.
Hestia: Configure Server > SSL
VestaCP: Server > configure > vesta ssl

Now this needs to be update manually

v-add-letsencrypt-host

If you configure a propper hostname on setup, it will even be created automatically after the installation reboot.
